1 Egg
¼ Cup All Purpose Flour

1 tsp Ginger Finely Grated
1 TBSP Shallot Finely Chopped
1 TBSP Honey
2 TBSP Soy Sauce
2 TBSP Sake
1 tsp Rice Vinegar
½ tsp Cornstarch
1 tsp Toasted Sesame Oil

- Start by making the Orange Ginger Glaze. Use a sharp and fine zester like a Microplane zester to finely grate orange zest, ginger, and garlic. Then, juice the orange and finely chop shallots. In a bowl, whisk together all of the ingredients for the glaze. Cook the mixture in a small pan over medium heat for a couple of minutes until it thickens, then set it aside.
- Prepare the walnut crust by finely chopping walnuts and combining them with breadcrumbs. You can use your favorite nuts or omit them entirely if preferred.
- Remove the skin from the salmon filet if it’s still attached. Cut the salmon into bite-size pieces, either into cylinders using a round pastry cutter or into 1-inch cubes. Season all sides of the salmon pieces with salt and pepper.
- Set up a breading station. Dip each salmon piece into flour, then beaten egg, and finally coat them with the walnut and breadcrumb mixture. Ensure each piece is evenly coated.
- Heat a skillet over medium heat and lightly coat the bottom with oil. Preheat the oven to 400°F (200°C). Fry each side of the salmon pieces for a minute or two until browned.
- Transfer the browned salmon bites onto a baking sheet and finish cooking them in the preheated oven. Cook for 3-5 minutes for pieces less than an inch thick, or 5-8 minutes for thicker pieces. To check for doneness, insert a toothpick into the thickest part of the salmon; if it goes through with no resistance, it is fully cooked.
